Aloo Gobi is one of the most simple and tasty Indian dishes. In English, gobi means cauliflower and aloo means potato. The recipe I'm sharing is a home style simple, easy to make, flavor packed and healthy dish. You can serve with paratha or roti.
There are many ways to make aloo gobi, but I'm sharing a very quick and simple recipe with some basic spices. I will say this dish truly captures the essence of Indian home cooking. It is the most popular among Indian vegetable dishes. While the homestyle Punjabi aloo gobi recipe is comforting.
One of the common complaints about this aloo gobi dish is that gobi florets either turn mushy or bland. With my recipe, you will have perfectly cooked gobi seasonings seeped in, and not mushy at all.
This is a super easy aloo gobi recipe where you don't have to cook the potatoes beforehand or do any heavy prep work.

Ingredients
- 500 gm cauliflower
- 250 gm potatoes
- 1 large, chopped onion
- 1 large, chopped tomato
- 3-4 chopped garlic cloves
- 1 small piece chopped ginger
- 1/2 cup chopped coriander leaves
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp kashmiri red chili powder
- 1 turmeric powder
- 1/2 garam masala
- 1//2 glass water
- Salt to taste
- Oil to cook
Recipe
- To make the aloo gobi first wash the cauliflower and potatoes and cut into the pieces. Take a kadhai and put the oil on it.
- Add cumin seeds and crack them.
- After that put chopped garlic and cook for 1 min.
- Now chopped ginger and sauté until golden fry.
- Then put chopped onion and fry till light golden color.
- At this stage add green chili and cook for some time.
- Add chopped tomato and cook till mushy.
- Please add all the spices like coriander powder, kashmiri red chili powder, turmeric powder garam masala, and salt and give a nice mix.
- Then add cauliflower and fry for one min.
- Now add potato pieces and keep stirring for some time.
- Use water to soften aloo gobi and cover with the lid then cook for some time on a low flame.
- Sprinkle some fresh chopped coriander leaves.
- Serve it.
- Make sure the flame should be medium to low.
- Put aloo and gobi separately on the kadhai.
- You can fry gobi and aloo if you want this.
- Adjust the level of spices to your choice.
- If you want to avoid adding the water, make sure the flame should be low to cook dish.
