Winter season for me it's not only winter season. It's a season of colorful vegetables so I always call its vegetables season. I always cook mix veg with different colorful vegetables specially on some occasions. But this is my mom's recipe for North Indian style mixed vegetable style mixed. Being vegetarians, we have lots of options in our diet. I am huge fan of this recipe. Even you can easily use different vegetables in this mix veg recipe depending on what you have on hand and what is in season. I have shared this recipe step by step with pictures so that you can try easily. But you must try this dish in this style.
I have added a bit of cashew paste to make this mix veg a little richer. You can easily omit it or swap in fresh cream or coconut cream to make this a completely vegan dish. This gives you restaurant style taste. I prepare this veg especially on some occasions. This is rich and creamy dish. Every family has its own recipe for the mixed veg recipe, where the combination of veggies, spices, and consistency like gravy or dry can vary the process remains the same
This dish is very flexible in many ways you can use any of the vegetables available to you, and you need not to stick to the particular vegetable. This is one of the most demanded dish at my home because everyone likes to eat it. This is quick one-pot dish that can be made quickly. This recipe is completely open-ended and can be easily extended and mix and matched with other veggies too.

Ingredients
- 1 cup paneer pieces
- 1 cup chopped beans
- 1 cup chopped red bell pepper
- 1 cup chopped yellow bell pepper
- 1 cup chopped capsicum
- 1 cup boiled baby corns
- 1 cup chopped mushrooms
- 1 cup chopped broccoli
- 1 cup cauliflower pieces
- 1 cup tomato puree
- 2 chopped onions
- 1 small piece chopped ginger
- 5-6 chopped garlic cloves
- 1 cup cashew paste
- 1 whole black cardamom
- 1 green cardamom
- 1 cinnamon stick
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- Oil to cook
Recipe
- Heat the oil in a heavy bottom pan or kadhai.
- Please add chopped beans on it.
- Then add broccoli.
- Add mushroom.
- Now add carrot and cook.
- Add capsicum and fry all the veggies till light golden pink color. Then cook all the veggies together for 5 mins and keep aside.
- In the same pan put more oil and all whole the spices like cumin seeds, black cardamom, green cardamom, cinnamon stick, and bay leaf then sauté for until aroma get out.
- At this stage add all the spices like coriander powder, red chili powder, turmeric powder, garam masala, and salt and give a nice mix.
- Mix well and cover with lid and cook for 5 mins.
- After cook the veggies put paneer pieces and mix gently.
- Serve it.

Advice
- Choose vegetables according to your choice.
- You can boil the vegetables rather than frying.
- If you want, you can fry the vegetables one by one.
- Cook the dish on medium to low flame.
- Use fresh cream insist of cashew paste.
