Rice Kheer with Jaggery    


My mother is an awesome cook. As a member of a Punjabi family, she excels in Punjabi cuisines. I have inherited her passion for cooking, especially vegetarian dishes, as I am a pure vegetarian.

Even most kheer varieties we prepare use sugar. However, the jaggery used in this recipe gives it a unique color and taste. I prefer using organic jaggery, but you can use any type of jaggery you prefer for this recipe.

One of the best aspects of this recipe is its simplicity. It only takes a few minutes to prepare, making it an excellent choice for festival feasts when you have many dishes to make.

This dessert is not only delicious but also healthy, particularly for diabetic individuals, since it is made with jaggery instead of sugar. Jaggery offers numerous health benefits: it’s good for the skin, helps purify the blood, aids in weight loss, detoxifies the liver, and treats anemia. And milk is also very important for our health. It is high in protein and calcium. It is good for teeth and bones. It boosts our immune system.

You can enjoy your kheer immediately or refrigerate it and serve it chilled. Trust me, this dessert is much tastier than regular kheer and is a must-try.


Ingredients

  • 1 ltr milk
  • 1/2 cup rice
  • 4-5 green cardamoms
  • 10-15 saffron strings
  • 150 gm jaggery
  • Mixed chopped nuts by your choice
  • Water as required 

Recipe

  • First wash the rice and soak for 1 hour.


  • Then boil the milk and add the rice to a heavy-bottomed pan.

  • Cook the rice perfectly and keep stirring on a low flame.

  • Add cardamoms and keep stirring.

  • Now add saffron milk on it and cook for two mins as I already had kept saffron milk aside.

  • Take another pan and put some water.

  • After boiling the water add jaggery and mix well.
  • Cook this jaggery until convert into syrup form and keep stirring.

  • Please add all the chopped nuts on this syrup and cook for some time.

  • Now add this mixture into the kheer then mix properly.
  • Serve it warm or chilled.

Advice

  • Take milk in a deep heavy thick bottom pan and bring to boil.
  • If you take full rice, then mash it properly while cooking the kheer.
  • You can melt jaggery in microwave as well.
  • Make sure the flame should be low to medium.
  • You can roast the dry fruits on ghee.
  • Do not add jaggery when the heat is on because that will lead to curdling of the milk.
  • Try using full-fat milk so that the kheer can be creamy.
  • Please adjust the quantity according to your preference.
