Masala baingan is a delicious Indian sabzi made with some basic spices. It is called Brinjal in English. This is the side dish, or you can use in main course as well. You can make so many dishes with the help of brinjals. It is versatile coz it comes in many varieties. Even this is my and my family' s all time favorite dish. We enjoy this with paratha. When I went to the market, I saw some fresh small, long brinjals so I couldn't resist myself to buy this coz it looked as if it had just been plucked from the plants and came to the market for sale

As we all know benefits of baingan, even brinjal in grown mainly for food and medicinal purposes. I possess vast amounts of dietary fiber as well as antioxidants. These beneficial compounds help to reduce blood sugar spikes and manage diabetes symptoms. It is natural rich in iron but also support hair growth. Brinjals may help to lower the risk of many heart diseases such as heart attack and stroke by apparently reducing the damage caused by free radicals. It has magnesium that promote skin health and elasticity. So, enjoy this dish and get lot of benefits from this.


Ingredients


250 gm brinjal
1 chopped onion 
1 chopped tomato
1 tsp chopped coriander leaves
1 tsp kasuri methi
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp kashmiri red chili powder
1 tsp coriander powder
1/2 tsp garam masala
salt to taste
oil to cook


Recipe

  • Take a pan add oil on it.
  • Add hing to give a nice aroma.
  • Put cumin seeds and let it crack.

  • After that add chopped garlic and cook for till golden fry.

  • After that chopped ginger and sauté.

  • Now chopped onion and cook till golden brown.

  • Put chopped tomato and cook till mushy.

  • Then add all the spices like turmeric powder, kashmiri red chili powder, coriander powder, garam masala and salt then give a nice mix and cook till aroma come out.
  • Add baingan pieces and give a nice mix then cover with lid and cook for 10 mins on a low flame.
  • Now add kasuri methi and mix well. This is completely optional, but it gives beautiful taste and aroma.

  • Then add coriander leave and give a nice mix.

  • Serve it.

Advice

  • I used long brinjals if you want can use small rounded brinjals.
  • The flame should be low so that brinjal can cook properly.
