Kundru Sabzi 

                  

Kundru is the green vegetable. In English Ivy gourd. This is one of my favorite dish. I always used to cook this. Kundru is very tasty and healthy dish. There are some vegetables used in Indian cuisine, which are not very popular and are not given their due credit by many people. 

It is quick dish that can be paired with dal and rice. It is a common Indian vegetable and prepared in various different ways. It is very popular in Asian City.  I cook this recipe with some basic ingredients. There is something about this particular food culture that may not woo a lot of people at the first go. But once you keep trying dishes you will know the versatility and the real flavors, and these can be your favorites.

Since kundru has a high-water content. It is very mild in flavor. Trust me guys this is so delicious in taste and a must try dish.

Kundru is used in preparing traditional medicines for effectively treating several diseases and infections. It helps regulate digestion, lower cholesterol levels. It is reduces the risk of heart disease.

It is rich in beta carotin. It is great source of soluble fiber and is also rich in vitamin A and C. And this is good for diabetic people. So try and enjoy this.


Ingredients 

  • 300 gm kundru
  • 1 large, chopped onion 
  • 2 large, chopped tomatoes 
  • 5-6 chopped, garlic cloves 
  • 1 chopped, green chili
  • 1 tsp, chopped coriander leaves 
  • 1 pinch hing
  • 1 tsp coriander powder 
  • 1/2 tsp red chili powder 
  • 1/2 turmeric powder 
  • 1/2 tsp garam masala 
  • Salt to taste 
  • Oil to cook 

Recipe 

  • First wash and cut the kundru into pieces and keep aside then take a kadhai and put the oil on it.
  • After heating the oil add cumin seeds and hing.
  • Now add chopped garlic and saute.
  • After that chopped onion and cook until golden brown.
  • Put chopped green chili.

  • Add chopped tomatoes and cook on the high flame until the it becomes mushy.
  • Now add all the spices like coriander powder, red chili powder, turmeric powder, garam masala and salt.

  • Add kundru on this masala.

  • Then at this stage cover with the lid and cook this until soften but yet retaining its natural crunch so check a few times in between.

  • Sprinkle coriander leaves to give some freshness.
  • Serve it.

Advice

  • The flame should be low while cooking kundru.
  • You can add water if you want.
  • Adjust spices to your taste.
  • You can cut the kundru into round shape
  • I use garam masala with other spices but if you want so you can add this after cook the recipe.
