Kaddu is most tasty sabzi. In English Pumpkin. It is loaded with nutrients and available throughout the year so we can make anytime any season. This Kaddu sabzi tastes mildly hot flavorful, tasty and spicy. In India this recipe is made in so many ways. Even so many people cook this recipe on the very special occasion. People eat this pumpkin during fast as well. It is very easy to make this dish and goes well with rice, roti, poori or paratha. This recipe uses no fancy ingredients. As we all know that pumpkin is so healthy for everyone. It is highly nutritious and particularly in vitamin A. It has low calorie and good for weight loss journey. This is heart healthy food.

You can enjoy this sabzi specially with poori because in every tradition occasion poori and kaddu sabzi combination is very famous. I have tried this dish with some basic spices so that anyone can enjoy this sabzi. You can cook for casual lunch and also during Navratri fasting with few changes in the spices. So this is very easy and tasty sabzi even everyone like this in my family.

Ingredients 


  • 1/2 kg pumpkin
  • 1 sliced onion
  • 2 chopped tomatoes
  • 1 chopped green chili
  • 1 tsp fenugreek seeds
  • 1 tsp cumin seeds
  • 1/2 tsp fennel seeds 
  • 1/2 tsp kashmiri red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • Oil to cook 


Recipe


  • First wash and cut the pumpkin on small pieces and keep aside then put the oil on pan.


  • Then put all the whole spices like fenugreek seeds, cumin seeds and fennel seeds and saute until it begins to smell good.

  • Now add sliced onion and cook till light golden brown.


  • Then add chopped tomatoes and saute until soft and mushy.

  • Add all the spices like coriander powder, kashmiri red chili powder, turmeric powder, garam masala powder and salt then cook for one min.

  • Now add some water on it and cover with the lid and cook for 15 mins or until kaddu m on a low flame.


  • Finally put some chopped coriander leaves to give freshness and a nice aroma.

  • Serve it.

Advice


  • You can peel off the pumpkin if you don't like this.
  • You can add mango powder if you want some tangy flavor on it.
  • If you want mushy structure so you can mash the pumpkin properly while cooking.
  • If you want so can skip onion.
